At Ristorante La Bettola in Mazara del Vallo, fish predominates in the menus offered to customers every day. Fish of the day to be enjoyed cooked following original recipes.
Just put yourself in the chef's hands to immerse yourself in the flavours of the sea.
Starting with the starters, where marinated fish stands out, from lobster with citrus fruit to fillets of mullet sautéed with rosemary.
Pietro Sardo has focused on the contrast of strong flavours, experimenting with unusual combinations, such as tortelIoni stuffed with mullet and ricotta or moscardini with Pachino cherry tomatoes and tuna bottarga.
Second courses include San Pietro fish with potatoes, grouper with artichokes and sea bream in salt.
Selected wines from the extensive wine cellar, where more than 200 Sicilian labels stand out, can be paired with the dishes.
For lunch and dinner, there is no shortage of desserts, all of which are homemade. Like the traditional Sicilian cassata, which, as the chef is keen to point out, is "organic": the royal pastry is in fact prepared in the kitchen, then coloured with natural extracts, such as sponge cake and candied fruit.
